Ingredients
– 250 g unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon ground chai spice mix
– ½ teaspoon salt
– 1 teaspoon vanilla extract
– 2 tablespoons milk
– Extra sugar for rolling
Method
1. Preheat the oven to 180 °C and line a baking tray with baking paper.
2. Cream the softened butter and sugar together until light and fluffy.
3. Add the egg and vanilla extract, mixing well to combine.
4. In another bowl, whisk the flour, baking soda, chai spice, and salt. Slowly add this mixture to the wet ingredients, blending until smooth.
5. Roll the dough into balls, coat in extra sugar, and place on the baking tray. Bake for approximately 10-12 minutes or until the edges are lightly golden.
