Ingredients
– 4 medium beetroots
– 60 ml olive oil
– 30 ml red wine vinegar
– 1 teaspoon honey
– Salt to taste
– Pepper to taste
– 75 g feta cheese
– 1/4 cup walnuts
– 1/4 cup fresh parsley
Method
1. Preheat the oven to 200°C. Wrap each beetroot in foil and place them on a baking tray. Roast for about 45-60 minutes or until fork-tender.
2. Allow the beetroots to cool down, then peel off the skins using your fingers or a paper towel. Cut them into cubes or wedges.
3. In a small bowl, whisk together olive oil, red wine vinegar, honey, salt, and pepper until combined.
4. Place the beetroot pieces in a large bowl. Drizzle the dressing over them and gently toss to coat.
5. Before serving, crumble feta cheese and sprinkle walnuts and parsley on top for added flavor.
