Herbed Tofu Spinach in Tomato Basil Sauce Recipe
Ingredients
– 400 g firm tofu, cut into cubes
– 2 cups fresh spinach, chopped
– 400 g canned diced tomatoes
– 2 tbsp olive oil
– 1 tsp garlic, minced
– 1 tsp dried basil
– 1 tsp dried oregano
– Salt, to taste
– Pepper, to taste
– 1/4 cup fresh basil, chopped
Method
1. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant.
2. Toss in the diced tomatoes, dried basil, oregano, salt, and pepper. Simmer for 5 minutes until the mixture thickens slightly.
3. Gently add the tofu cubes and fresh spinach to the pan. Cook for another 5 minutes, stirring occasionally.
4. Sprinkle chopped fresh basil on top before serving.
5. Serve hot over rice or pasta if desired.
