Goan Style Mushroom Vindaloo Recipe
Ingredients
1 tablespoon vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1-inch piece ginger, grated
1 tablespoon vinegar
1 tablespoon chili powder
1 tablespoon turmeric powder
400 g mushrooms, sliced
1 cup coconut milk
Salt to taste
Method
Heat the vegetable oil in a large pan over medium heat.
Add the chopped onion and sauté until it turns golden brown.
Stir in the minced garlic and grated ginger; cook for a few more minutes.
Mix in vinegar, chili powder, and turmeric powder, stirring well to combine.
Finally, add the sliced mushrooms along with coconut milk. Season with salt and let it simmer until the mushrooms are tender.
