Ingredients

– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup sugar
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 1 tablespoon vanilla extract
– 1 cup sour cream
– 1 1/2 cups cranberry sauce
– 1/4 cup fresh cranberries (optional)

Method

1. Preheat your oven to 175 degrees Celsius. Grease a bundt pan well.
2. Combine flour, baking powder, and salt in a bowl. Mix well and set aside.
3. In another bowl, beat together sugar and butter until creamy. Add eggs one at a time, followed by the vanilla extract. Mix until smooth.
4. Gradually add the flour mixture to the cream mixture while alternating with sour cream. Stir until combined.
5. Pour half the batter into the prepared pan, then layer with cranberry sauce and optional fresh cranberries. Top with the remaining batter. Bake for about 50-60 minutes or until a skewer comes out clean.
