Ingredients
– 400 g golden yams, peeled and chopped
– 1 cup brown sugar
– 1/2 cup vegetable oil
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 teaspoon ground cinnamon
– 1/2 cup chopped walnuts
Method
1. Preheat the oven to 180°C and line a cake pan with baking paper.
2. Boil the chopped yams in water until tender. Drain and mash them in a bowl.
3. In a separate bowl, mix the brown sugar and oil until combined. Add the mashed yams, eggs, and vanilla, stirring well.
4. In another bowl, combine flour, baking powder, salt, and cinnamon. Gradually add this to the yam mixture, mixing until smooth.
5. Fold in the chopped walnuts. Pour the batter into the prepared cake pan and bake for about 45 minutes or until a toothpick comes out clean.
