Hearty Italian Sausage And Barley Stew Recipe For Dinner

Ingredients

– 450 g Italian sausage
– 1 cup onion, chopped
– 2 cloves garlic, minced
– 2 cups vegetable broth
– 1 cup barley
– 1 can (400 g) diced tomatoes
– 1 cup carrots, sliced
– 1 cup green beans, chopped
– 1 teaspoon Italian seasoning
– Salt and pepper to taste

Method

1. Start by heating a large pot over medium heat. Add in the sausage and cook until browned.
2. Stir in the chopped onion and minced garlic. Cook until the onion becomes soft.
3. Pour the vegetable broth into the pot along with the barley and diced tomatoes. Mix well.
4. Add the sliced carrots and chopped green beans. Sprinkle in the Italian seasoning, salt, and pepper.
5. Cover the pot and let it simmer for about 30 minutes until the barley is tender.
