Ingredients
– 4 medium-sized beets
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 tablespoon fresh lemon juice
– 1 tablespoon honey
– 1 teaspoon fresh thyme (or ½ teaspoon dried)
– 1 clove garlic, minced
– Foil for wrapping
Method
1. Preheat your oven to 200°C (400°F).
2. Wash the beets thoroughly and trim off the tops and tails.
3. Place each beet on a piece of foil and drizzle with olive oil. Sprinkle salt and black pepper over them.
4. Wrap each beet tightly in the foil and place them on a baking tray. Roast them for about 45 to 60 minutes.
5. Once they are tender, unwrap the beets, let them cool slightly, then peel. Slice them and toss in lemon juice, honey, thyme, and minced garlic before serving.
