Ingredients
– 2 cups mixed dried fruit

Method
1. Start by preheating the oven to 160°C (320°F). Grease a cake pan and set it aside.
2. In a large bowl, combine the mixed dried fruit and fruit juice. Let the mixture soak for about 30 minutes.
3. Add the brown sugar, vegetable oil, and spices to the fruit mixture. Stir this thoroughly.
4. In a separate bowl, mix the flour, baking soda, and baking powder. Gradually combine the dry ingredients with the wet ingredients until just mixed.
5. Fold in the chopped nuts, pour the batter into the prepared pan, and bake for 50-60 minutes. Cool before serving.
