Ingredients
- 200 g digestive biscuits
- 100 g unsalted butter, melted
- 500 g cream cheese
- 250 g icing sugar
- 300 ml sour cream
- 2 tsp vanilla extract
- 200 g mixed berries (fresh or frozen)
- 2 tbsp lemon juice
- 1 tbsp gelatine (optional)
- Fresh mint leaves for garnish (optional)
Method
- Crush the digestive biscuits in a bowl until they resemble fine crumbs.
- Combine the crumbs and melted butter, then press the mixture into the bottom of a pie dish to create the base.
- In a separate bowl, beat the cream cheese, icing sugar, sour cream, and vanilla extract until smooth.
- Add the lemon juice and mix well. If using gelatine, dissolve it in a little warm water and mix it in now.
- Pour the filling over the biscuit base, then top with mixed berries. Chill the dessert in the fridge for at least 3 hours before serving.
