Delicious Eggless Thanksgiving Desserts: Perfect For Your Feast

Ingredients

  • 200 g digestive biscuits
  • 100 g unsalted butter, melted
  • 500 g cream cheese
  • 250 g icing sugar
  • 300 ml sour cream
  • 2 tsp vanilla extract
  • 200 g mixed berries (fresh or frozen)
  • 2 tbsp lemon juice
  • 1 tbsp gelatine (optional)
  • Fresh mint leaves for garnish (optional)

Method

  1. Crush the digestive biscuits in a bowl until they resemble fine crumbs.
  2. Combine the crumbs and melted butter, then press the mixture into the bottom of a pie dish to create the base.
  3. In a separate bowl, beat the cream cheese, icing sugar, sour cream, and vanilla extract until smooth.
  4. Add the lemon juice and mix well. If using gelatine, dissolve it in a little warm water and mix it in now.
  5. Pour the filling over the biscuit base, then top with mixed berries. Chill the dessert in the fridge for at least 3 hours before serving.
