Ingredients
1 cup rice
2 cups water
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup frozen peas
1 cup carrot, diced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon fresh parsley, chopped
Method
1. Rinse the rice under cold water until it runs clear.
2. In a large pot, bring the water to a boil. Stir in the rice, then reduce the heat and cover. Cook for about 15 minutes, or until the rice is tender.
3. While the rice is cooking, heat olive oil in a frying pan over medium heat. Add the chopped onion and cook until it becomes soft.
4. Stir in the minced garlic, diced carrots, and peas. Cook for about 5 minutes until the vegetables are tender. Season with salt and pepper.
5. Once the rice is ready, mix it with the cooked vegetables. Garnish with chopped parsley before serving.
