Weekly Meal Plan Recipe: Creamy One-Pot Pasta

Ingredients
300 g pasta of your choice
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
400 g diced tomatoes
500 ml vegetable broth
200 ml cream
1 tablespoon Italian seasoning
Salt and pepper to taste
Fresh basil leaves for garnish

Method
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
2. Stir in the minced garlic, cooking for another minute until fragrant.
3. Pour in the diced tomatoes, vegetable broth, and Italian seasoning. Bring the mixture to a boil.
4. Add the pasta and stir well. Reduce heat to a simmer and cover for 10-12 minutes until pasta is cooked.
5. Once cooked, stir in the cream and season with salt and pepper. Garnish with fresh basil before serving.
