Ingredients
1 cup dried beans (any type you like)
4 cups water
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)
Extra lemon wedges (optional)
Method
Soak the dried beans overnight in water.
Drain the beans and rinse them under cool water.
In a pot, add the beans and 4 cups of fresh water. Bring to a boil, then let it simmer for about an hour until the beans are soft.
Heat olive oil in a skillet over medium heat. Add minced garlic, salt, pepper, and smoked paprika. Cook for a minute until fragrant.
Add the drained beans to the skillet. Stir to coat them in the oil and spices. Squeeze lemon juice on top and garnish with parsley. Serve with extra lemon wedges if desired.
