Ingredients
4 medium-sized potatoes
4 eggs
1 cup of grated cheese
1 large onion
4 tablespoons of olive oil
1 teaspoon of paprika
Salt to taste
Pepper to taste
Fresh parsley for garnish
1 lemon, cut into wedges
Method
Peel and cut the potatoes into thin slices.
Heat olive oil in a frying pan over medium heat.
Add potatoes and cook until golden brown. Stir occasionally.
Once cooked, drain excess oil and place them on a serving dish.
Fry the eggs in the same pan and place them on top of the potatoes. Sprinkle with cheese, onion, paprika, salt, and pepper. Garnish with parsley and serve with lemon wedges.
