Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¾ cup granulated sugar
1 large egg
125 ml unsweetened apple cider
½ cup vegetable oil
Method
Preheat your oven to 180°C and line a muffin tin with paper cups.
Mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a large bowl.
Whisk the sugar, egg, apple cider, and vegetable oil together in a separate bowl.
Combine the wet and dry ingredients, stirring until just mixed.
Scoop the batter evenly into the muffin cups and bake for 18 to 20 minutes until golden.
