Ingredients
5 large eggs
100 g sugar
1 tsp vanilla extract
90 g plain flour
25 g cocoa powder
300 ml heavy cream
1 cup ice cream (your favorite flavor)
100 g chocolate chips
Icing sugar for dusting
Method
Preheat the oven to 180°C (350°F). Line a baking tray with baking paper.
Whisk eggs with sugar and vanilla extract until the mixture is thick and pale.
Gently fold in the plain flour and cocoa powder until combined.
Pour the batter into the prepared baking tray and spread it evenly. Bake for 10-12 minutes.
Once cooled, carefully roll the cake up with the baking paper inside. Unroll it and spread ice cream over the top. Roll it back up, wrap in cling film, and freeze until firm.
