Bacon Potato Skins Recipe

Ingredients
4 large potatoes
100 g bacon bits
1 cup shredded cheese
Ā½ cup sour cream
Ā¼ cup green onions, chopped
Salt to taste
Pepper to taste
Oil for brushing

Method
1. Preheat your oven to 200Ā°C (400Ā°F).
2. Scrub the potatoes, then poke several holes in each with a fork. Bake the potatoes for about 45 minutes until tender.
3. Allow the potatoes to cool slightly. Cut them in half lengthwise and scoop out some of the inside, leaving about 1 cm of the skin.
4. Brush the skins with oil, sprinkle with salt and pepper, and place them on a baking tray. Bake for 10 minutes.
5. Fill the skins with bacon bits, cheese, and green onions. Bake for another 5-10 minutes until the cheese bubbles. Serve with sour cream.
