Ingredients
– 180 g plain flour
– 130 g brown sugar
– 60 g granulated sugar
– 125 ml unsweetened applesauce
– 90 ml vegetable oil
– 1 tsp vanilla extract
– 120 g white chocolate chips
– 120 g fresh or dried cranberries
– ½ tsp baking soda
– ¼ tsp salt
Method
1. Preheat your oven to 180°C and line a baking dish (20×20 cm) with baking paper.
2. Combine the flour, baking soda, and salt in a mixing bowl.
3. In another bowl, mix the brown sugar, granulated sugar, applesauce, vegetable oil, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
5. Fold in the white chocolate chips and cranberries, then pour the batter into the prepared dish. Bake for about 25 minutes or until golden brown on top.
