Ingredients

  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method

  1. Preheat your oven to 180°C and line a muffin tray with paper liners.
  2. In a large bowl, mix together the pumpkin puree, oil, almond milk, and vanilla extract until smooth.
  3. Add the brown sugar, flour, baking powder, baking soda, pumpkin spice, and salt to the mixture and stir gently until combined.
  4. Spoon the batter evenly into the muffin tray, filling each liner about 3/4 full.
  5. Bake in the oven for about 20-25 minutes, or until a toothpick comes out clean.
