Ingredients
– 400 g dried kidney beans (soaked overnight)
– 400 g canned diced tomatoes
– 1 large onion, chopped
– 2 cloves garlic, minced
– 1 green bell pepper, chopped
– 250 g minced beef
– 1 tsp smoked paprika
– 1 tsp cumin
– 1 tbsp brown sugar
– 2 cups beef broth
Method
1. Heat a large pot over medium heat. Add the minced beef and cook until brown.
2. Stir in the chopped onion, garlic, and green bell pepper. Cook until soft.
3. Add the soaked kidney beans, canned tomatoes, beef broth, smoked paprika, cumin, and brown sugar.
4. Bring to a boil, then reduce the heat. Let it simmer for about 1 hour, stirring occasionally.
5. Serve warm and enjoy.
