Ingredients
– 300g pasta
– 30g butter
– 1 tablespoon olive oil
– 250g mushrooms, sliced
– 3 cloves garlic, minced
– 200ml cream
– 100ml vegetable broth
– Salt, to taste
– Black pepper, to taste
– Fresh parsley, chopped
Method
1. Cook the pasta according to package instructions in a large pot of salted water. Drain and set aside when done.
2. Melt the butter with the olive oil in a large pan over medium heat.
3. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until browned.
4. Stir in the minced garlic and cook for 1 more minute. Then add the vegetable broth and cream. Mix well and let simmer for 3-4 minutes.
5. Season with salt and pepper, then toss the cooked pasta in the sauce. Serve hot, garnished with fresh parsley.
