Crispy Parmesan Smashed Potatoes
Ingredients
1 kg baby potatoes
60 ml olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
60 g grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1 teaspoon paprika
Method
1. Preheat the oven to 220°C and line a baking tray with parchment paper.
2. Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain them well.
3. Place the potatoes on the baking tray. Use a fork or a potato masher to gently smash each potato.
4. Drizzle the olive oil over the smashed potatoes. Sprinkle with garlic powder, onion powder, salt, black pepper, and paprika.
5. Add grated Parmesan cheese on top. Bake for 25-30 minutes until crispy and golden. Garnish with parsley before serving.
