Pumpkin Soup Recipe
Ingredients
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
750 grams pumpkin, peeled and diced
1 litre vegetable broth
200 ml coconut milk
Salt, to taste
Pepper, to taste
Method
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until soft, about 5 minutes.
Stir in minced garlic, cumin, and coriander; cook for another minute.
Add diced pumpkin and pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth. Stir in coconut milk and season with salt and pepper as desired.
