Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1/4 cup sugar
1 cup milk
2 large eggs
1/4 cup melted butter
1 cup corn kernels (fresh or canned)
1 cup shredded cheese (cheddar or your choice)
Method
1. Preheat the oven to 200°C. Grease a baking dish or skillet lightly with butter.
2. In a large bowl, mix the cornmeal, flour, baking powder, salt, and sugar until combined.
3. Crack the eggs into a separate bowl. Whisk them together with the milk and melted butter.
4. Pour the wet ingredients into the dry mixture. Stir until combined. Then fold in the corn and cheese.
5. Spread the mixture into the prepared dish and bake for 25 to 30 minutes or until golden brown on top.
