Ingredients

2 cups quinoa

1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 bell pepper, diced
1 cup cooked chickpeas
1 lemon, juiced
1/4 cup fresh parsley, chopped

Method

Rinse the quinoa under cold water to remove any bitterness.
In a pot, combine quinoa, water, and salt. Bring to a boil, then reduce the heat and simmer for 15 minutes until the water is absorbed.
Fluff the quinoa with a fork and let it cool to room temperature.
Stir in cherry tomatoes, cucumber, bell pepper, chickpeas, olive oil, lemon juice, and parsley.
Serve chilled or at room temperature.
