Delicious Greek Broken Wheat Salad With Chickpeas And Feta

Ingredients
1 cup broken wheat
1 can (400g) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup feta cheese, crumbled
1/4 cup fresh mint, chopped
1/4 cup olive oil
Juice of 1 lemon
Salt, to taste
Pepper, to taste

Method
Start by cooking the broken wheat according to the package instructions. Drain it properly and let it cool.

Combine the chickpeas, cherry tomatoes, cucumber, feta cheese, and fresh mint in a large bowl.

Add the cooked broken wheat once it has cooled. Mix all the ingredients together gently.

Pour the olive oil and lemon juice over the salad. Season with salt and pepper, then toss to combine thoroughly.

Serve immediately or refrigerate for a bit before serving.
