Ingredients
– 1 cup jasmine rice
– 1 cup coconut milk
– 1 cup water
– 1 teaspoon salt
– 1 tablespoon sugar
– 1 tablespoon vegetable oil
– 2 green onions, chopped
– Optional: shredded coconut for topping
– Optional: lime wedges for serving
Method
1. Rinse the jasmine rice in cold water until the water runs clear. This helps remove excess starch.
2. Combine the rinsed rice, coconut milk, water, salt, and sugar in a medium saucepan. Stir well to mix everything together.
3. Place the saucepan over medium heat and bring the mixture to a boil. Once it boils, reduce the heat to low and cover it with a lid.
4. Let the rice simmer on low heat for about 15 minutes. Avoid lifting the lid during cooking as it keeps the steam inside.
5. After 15 minutes, remove the saucepan from the heat and let it sit for an additional 5 minutes. Fluff the rice with a fork before serving. Garnish with green onions and optional toppings if desired.
