Ingredients
250 g pasta
2 cups sweet corn (fresh or frozen)
1 tablespoon olive oil
2 cloves garlic, minced
1 small onion, chopped
1 cup cherry tomatoes, halved
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh basil, chopped
1/4 cup grated cheese (optional)
Method
Cook the pasta as per the package instructions until al dente.
In a large pan, heat the olive oil over medium heat and add the chopped onion and garlic.
Sauté for about 3 minutes until the onion is soft.
Add the corn and cherry tomatoes to the pan. Season with salt and pepper and cook for another 5 minutes.
Combine the pasta with the vegetable mixture in the pan. Toss in the basil and cheese, mixing well.
