Ingredients

300 g oyster mushrooms
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 tablespoon soy sauce
1 head romaine lettuce, chopped
1/4 cup vegan mayonnaise
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper

Method

1. Preheat your oven to 200°C. Line a baking tray with parchment paper.
2. Toss the oyster mushrooms with olive oil, garlic powder, smoked paprika, and soy sauce on the tray. Spread them out into a single layer.
3. Bake the mushrooms for about 20-25 minutes until they are golden and crispy, turning halfway through.
4. While the mushrooms are baking, mix the chopped romaine lettuce, vegan mayonnaise, lemon juice, salt, and black pepper together in a large bowl.
5. Once the mushrooms are ready, add them to the salad and toss gently to combine. Serve right away.
