Ingredients
– 1 pork loin (about 1 kg)
– 1 cup fresh spinach, chopped
– 2 tablespoons pesto
– 1/2 cup dried cranberries
– 1/2 cup pecans, chopped
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– Salt, to taste
– Pepper, to taste
– Kitchen twine
Method
1. Preheat the oven to 180°C (350°F).
2. Mix spinach, pesto, cranberries, pecans, and garlic in a bowl.
3. Cut a slit into the pork loin lengthwise and fill it with the spinach mixture.
4. Drizzle olive oil over the pork loin. Season with salt and pepper.
5. Tie the pork with kitchen twine and place it in an oven-safe dish. Bake for 50-60 minutes or until cooked through.
