Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 500 g chicken breast, diced
– 1 red bell pepper, chopped
– 1 zucchini, sliced
– 1 can (400 g) diced tomatoes
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Method
1. Heat olive oil in a large pan over medium heat.
2. Add the chopped onion and garlic, cooking until soft, about 3 minutes.
3. Stir in the chicken and cook until browned, about 5 to 7 minutes.
4. Toss in the red bell pepper, zucchini, tomatoes, oregano, salt, and black pepper.
5. Simmer everything together for 15 minutes until the chicken is cooked through.
