Ingredients
4 ripe peaches
200 g cherries, pitted
200 g goat cheese, crumbled
100 g mixed salad leaves
60 ml balsamic vinegar
60 ml olive oil
Salt to taste
Pepper to taste
2 tablespoons honey
Chopped nuts for topping (optional)
Method
1. Start by preheating the grill to medium heat. Cut the peaches in half and remove the pits.
2. Lightly brush the peach halves with olive oil and place them on the grill, cut side down. Grill for about 4-5 minutes until they are soft and have grill marks.
3. While the peaches are grilling, combine salad leaves, cherries, salt, and pepper in a large bowl.
4. Once the peaches are ready, remove them from the grill. Allow them to cool slightly and then slice them.
5. Arrange the salad, adding the grilled peaches and crumbled goat cheese. Drizzle balsamic vinegar and honey over the top. Sprinkle with nuts if using.
