Ingredients
1 cup all-purpose flour
1/4 cup sugar
1/4 tsp salt
1/4 cup unsalted butter, cold and cubed
3-5 tbsp cold water
2 cups peeled and sliced peaches
1 cup pitted cherries, halved
1 tbsp cornstarch
1 tsp vanilla extract
1 egg, beaten
Method
1. Preheat the oven to 220°C (425°F). In a bowl, combine the flour, sugar, and salt. Mix in the cold butter until crumbly.
2. Gradually add cold water, a tablespoon at a time, until the dough forms. Shape it into a disc and refrigerate for 30 minutes.
3. Roll out the dough on a floured surface into a circle, about 30 cm in diameter. Transfer to a baking sheet lined with parchment paper.
4. Layer the peaches and cherries in the center, leaving a 5 cm border. Sprinkle cornstarch and vanilla over the fruit. Fold the edges of the dough over the fruit.
5. Brush the crust with beaten egg and bake for 30-35 minutes or until golden brown. Let it cool slightly before serving.
