Mediterranean Pasta Salad Recipe
Ingredients
250 g pasta (fusilli or penne)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup bell pepper, diced
1 cup olives, pitted and sliced
1 cup feta cheese, crumbled
60 ml olive oil
30 ml red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
Method
Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water.
In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, and olives.
Add the cooled pasta to the bowl with vegetables. Toss everything together gently.
In a small bowl, mix the olive oil, red wine vinegar, oregano, salt, and pepper. Pour this dressing over the pasta salad.
Finally, fold in the feta cheese and serve chilled or at room temperature.
