Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 zucchini, diced
1 bell pepper, diced
400 ml diced tomatoes (canned)
500 ml vegetable broth
1 teaspoon dried basil
Salt and pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add onion and sauté until softened, about 5 minutes.
3. Stir in garlic, carrot, zucchini, and bell pepper. Cook for another 5 minutes.
4. Pour in diced tomatoes and vegetable broth. Add basil, salt, and pepper, then stir well.
5. Bring to a boil, reduce heat, and let it simmer for 20 minutes.
