Ingredients
– 3 ripe bananas
– 100 g brown sugar
– 125 g unsalted butter, melted
– 1 large egg
– 1 teaspoon vanilla extract
– 200 g all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon cinnamon
– 100 g butterscotch chips
Method
1. Preheat the oven to 175°C. Grease a loaf pan and set it aside.
2. In a bowl, mash the ripe bananas until smooth.
3. Mix in the melted butter and brown sugar until combined, then add the egg and vanilla extract.
4. In a separate bowl, combine the flour, baking soda, and cinnamon. Gradually stir this into the banana mixture.
5. Fold in the butterscotch chips, pour the batter into the prepared loaf pan, and bake for 50-60 minutes.
