Ingredients
– 800 g baby potatoes
– 3 tbsp olive oil
– 1 tsp garlic powder
– 1 tsp paprika
– 1 tsp dried oregano
– 1 tsp salt
– ½ tsp black pepper
– 2 tbsp fresh parsley, chopped
– 4 eggs
– 50 ml milk
Method
1. Preheat the oven to 200°C (400°F).
2. Cut baby potatoes in half and place them in a bowl.
3. Drizzle olive oil over the potatoes. Then, add garlic powder, paprika, oregano, salt, and black pepper. Toss until well coated.
4. Spread potatoes evenly on a baking sheet and bake for about 30 minutes until golden and crispy.
5. While potatoes bake, whisk eggs with milk in a bowl. Cook them in a non-stick pan over medium heat, stirring until fluffy. Serve everything together with chopped parsley on top.
