Ingredients
– 500 g chicken breast, cut into thin slices
– 1/2 cup plain flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 eggs
– 1 cup breadcrumbs
– 1 cup grated Parmesan cheese
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– Fresh parsley, chopped (for garnish)
Method
1. Grab a large plate and mix the flour, salt, and pepper together.
2. Take another bowl and beat the eggs until well mixed.
3. In a third plate, combine breadcrumbs and Parmesan cheese.
4. Dredge each chicken slice in the flour mixture, dip into the eggs, then coat with the breadcrumb mixture.
5. Heat olive oil in a frying pan over medium heat. Cook chicken for about 5 minutes on each side until golden brown. Squeeze lemon juice over the top and garnish with parsley before serving.
