Ingredients
– 1 medium cabbage
– 4 cups vegetable broth
– 1 large onion
– 4 garlic cloves
– 1 teaspoon paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons olive oil
– 200g grated cheese
– Fresh parsley for garnish
Method
1. Cut the cabbage into quarters and remove the core. Slice it into thin strips.
2. Dice the onion and mince the garlic cloves.
3. Heat olive oil in a large pot over medium heat. Add the onion and stir until it’s soft, about 5 minutes.
4. Add garlic, paprika, salt, and pepper. Stir for another minute, then add the sliced cabbage and vegetable broth.
5. Cover and cook for 30 minutes. Remove the lid and add cheese on top. Cook for an extra 5 minutes until melted. Garnish with fresh parsley.
