Ingredients
– 200 g digestive biscuits
– 90 g unsalted butter
– 600 g cream cheese
– 200 ml sour cream
– 100 g sugar
– 1 tsp vanilla extract
– 3 large eggs
– 250 g cherries, pitted and halved
– 50 g icing sugar
– 2 tbsp water
Method
1. Crush the digestive biscuits into fine crumbs using a food processor or a plastic bag and a rolling pin.
2. Melt the unsalted butter in a small saucepan. Mix the melted butter with the biscuit crumbs and press the mixture into a greased 23 cm springform pan to form the base.
3. In a large bowl, beat the cream cheese, sour cream, sugar, and vanilla extract until smooth. Add the eggs one by one, mixing well after each.
4. Pour the cream cheese mixture over the biscuit base in the pan. Bake in a preheated oven at 160°C for about 50 minutes or until set around the edges but still slightly wobbly in the middle.
5. Combine cherry halves, icing sugar, and water in a saucepan. Cook over medium heat until the cherries soften. Let cool, then spoon the cherry mixture over the baked cheesecake before serving.
