Delicious Smoked Duck Recipe: Mastering The Kettle Grill

Ingredients
1 whole duck (approximately 2 kg)
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried thyme
1 cup applewood chips (for smoking)
1 cup chicken stock
1 tablespoon honey
1 tablespoon soy sauce

Method
1. Prepare the duck by rinsing it under cold water. Pat it dry with paper towels.
2. Mix salt, pepper, garlic powder, onion powder, and thyme in a bowl. Rub this seasoning blend all over the duck.
3. Soak the applewood chips in water for about 30 minutes. This helps to create more smoke when grilling.
4. Preheat the kettle grill to medium heat. Once hot, add the soaked wood chips directly onto the coals.
5. Place the duck on the grill, breast side up. Cook for about 1.5 hours, occasionally adding chicken stock to keep it moist. Brush the duck with honey and soy sauce for the last 15 minutes of cooking.
