Ingredients
– 1 ½ cups plain flour
– 1 cup sugar
– ½ cup unsalted butter, softened
– 3 large eggs
– 1 cup milk
– 2 teaspoons baking powder
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– ½ teaspoon salt
– ¼ cup sugar (for topping)
Method
1. Preheat the oven to 180°C and line a cupcake tray with paper cases.
2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
3. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
4. Mix flour, baking powder, salt, and cinnamon in a separate bowl. Gradually add this to the butter mixture, alternating with milk until combined.
5. Fill each cupcake case about two-thirds full with the batter. Bake for 18-20 minutes. Let them cool before sprinkling with extra sugar.
