Ingredients

– 1 cup of rice
– 2 cups of water
– 1 tablespoon of olive oil
– 1 onion, chopped
– 2 cloves of garlic, minced
– 1 cup of mixed vegetables (e.g. carrots, peas, corn)
– 1 tablespoon of soy sauce
– Salt and pepper to taste
– 1 teaspoon of dried herbs (e.g. thyme or oregano)
– 1 egg, beaten

Method

1. Rinse the rice under cold water until the water runs clear.
2. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes or until the water is absorbed.
3. While the rice cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until they are soft.
4. Stir in the mixed vegetables and cook for another 5 minutes. Add the cooked rice to the skillet, then mix in the soy sauce, herbs, salt, and pepper.
5. Push the rice mixture to one side of the skillet. Pour the beaten egg into the other side and scramble it until cooked, then mix it all together.
