Ingredients
– 2 cups uncooked pasta
– 1 tablespoon olive oil
– 2 cups cherry tomatoes, halved
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– 2 cups baby spinach
– 1 cup feta cheese, crumbled
– Salt to taste
– Pepper to taste
– Fresh basil, for garnish
Method
1. Boil water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add halved cherry tomatoes and sauté until softened, about 5 minutes.
3. Stir in minced garlic and oregano. Cook for an additional minute until fragrant.
4. Add the cooked pasta and baby spinach into the skillet. Mix everything together until the spinach wilts.
5. Remove from heat. Incorporate the crumbled feta cheese. Season with salt and pepper. Garnish with fresh basil before serving.
