Ingredients

– 1 cup rice
– 2 cups water
– 1 tablespoon butter
– 1 teaspoon salt
– 1 cup mixed vegetables (frozen or fresh)
– 1 teaspoon soy sauce
– 2 eggs
– 1 green onion, chopped
– 1 tablespoon oil
– Pepper to taste

Method

1. Begin by rinsing the rice under cold water until it runs clear. Place rice in a pot with 2 cups of water, add salt and butter, then bring to a boil.
2. Once boiling, reduce the heat to low, cover, and let simmer for about 18 minutes. After the time is up, remove from heat and let it sit covered for another 5 minutes.
3. While the rice is resting, heat oil in a pan over medium heat. Add mixed vegetables and stir-fry until tender. This should take about 5 minutes.
4. Push the vegetables to the side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then combine with the vegetables.
5. Afterward, fluff the rice with a fork and add it to the pan. Mix in soy sauce, chopped green onion, and pepper. Stir well and serve hot.
