Ingredients
400g chicken breast, cut into bite-sized pieces
2 cups broccoli florets
1 cup bell pepper, sliced
2 cups cooked rice
60ml soy sauce
30ml olive oil
2 cloves garlic, minced
1 tsp ginger, grated
Salt, to taste
Pepper, to taste
Method
Heat olive oil in a large pan over medium heat.
Add garlic and ginger, stirring for about 30 seconds until fragrant.
Cook chicken pieces until browned and cooked through, which takes about 5-7 minutes.
Add broccoli and bell pepper, cooking until they are tender, around 4-5 minutes.
Pour soy sauce over the mixture, then stir in cooked rice. Season with salt and pepper to taste.
