Southern Sweet Potato Biscuits
Ingredients
1 cup mashed sweet potatoes
2 cups all-purpose flour
0.5 cup milk
0.5 cup unsalted butter, softened
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 large egg
Method
1. Preheat your oven to 220°C. Line a baking tray with baking paper.
2. Mix the mashed sweet potatoes, milk, and softened butter in a bowl until smooth.
3. In another bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
4. Combine the dry ingredients with the sweet potato mixture, then stir in the egg until a dough forms.
5. Roll out the dough on a floured surface. Cut into rounds and place on the baking tray. Bake for 15-20 minutes or until golden brown.
