Ingredients
– 500 g chicken breast, diced
– 2 cups broccoli florets
– 1 cup bell peppers, chopped
– 1 cup carrots, sliced
– 1 tablespoon soy sauce
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 teaspoon ginger, grated
– 1 teaspoon sesame oil
– Cooked rice, to serve
Method
1. Heat olive oil in a large pan over medium heat.
2. Add minced garlic and grated ginger. Stir for about 30 seconds until fragrant.
3. Toss in the diced chicken. Cook until browned and fully cooked, about 5-7 minutes.
4. Mix in broccoli, bell peppers, and carrots. Pour in soy sauce and sesame oil. Stir-fry for 5-7 minutes until vegetables are tender.
5. Serve the stir-fry hot over cooked rice.
