Ingredients
– 400g spaghetti
– 2 tablespoons olive oil
– 1 onion, diced
– 2 garlic cloves, minced
– 1 can (400g) diced tomatoes
– 2 cups baby spinach
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– Grated cheese for serving
Method
1. Cook the spaghetti according to package instructions until it is al dente. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add diced onion and cook until soft, about 5 minutes.
3. Stir in minced garlic and cook for an additional minute until fragrant.
4. Add the canned tomatoes, oregano, salt, and pepper. Simmer for about 10 minutes until slightly thickened.
5. Mix in the fresh spinach and cooked spaghetti. Toss everything together and serve with grated cheese on top.
