Caramel Cornbread Pudding Recipe
Ingredients
2 cups of cornmeal
1 cup of milk
1 cup of sugar
1/2 cup of butter, melted
3 large eggs
1 teaspoon of vanilla extract
1 teaspoon of baking powder
1/2 teaspoon of salt
1 cup of caramel sauce
1 cup of chopped pecans (optional)
Method
Preheat the oven to 180 degrees Celsius.
Combine cornmeal, milk, and sugar in a bowl.
Mix in melted butter, eggs, vanilla, baking powder, and salt until smooth.
Pour the batter into a greased baking dish.
Drizzle caramel sauce over the top and sprinkle with pecans, if using. Bake for 30-35 minutes or until set.
